Soup dumplings are a smaller version of Beijing style. They have a firm meat filling and come in a light soup with a garnish of enoki mushroom and coriander. They are served this way all over china. The soup can be spiced up with a little soy or chilli from the sauce bar, or our Szechwan sauce or Guilin chilli.
